A very easy butternut squash caserole that is filling and healthy. (Use Barilla Plus rotini as the pasta.)

Recipe Ingredients for Simple Butternut Squash Pasta Caserole

16 oz. pasta
6 cups butternut squash (roasted)
1/2 cup chicken broth
1/4 cup shallots (roasted)
1/2 cup light sour cream
3 tbsp sage
1/2 cup breadcrumbs
1/2 cup parmesan cheese

Recipe Directions for Simple Butternut Squash Pasta Caserole

  1. Roast cubed butternut squash and diced shallots together on a cookie sheet (toss first in a small amount of olive oil, salt and pepper if desired) for about 45 minutes, until squash is very tender.

  2. Cook pasta until just al dente.

  3. Puree roasted veggies and sage. Add chicken broth and sour cream.

  4. Combine pureed ingredients and pasta in a large bowl and spread into baking dish. Sprinkle top with parmesan and breadcrumbs.

  5. Bake for 40 minutes at 350 or until top is lightly browned.
