Simple Beef Jerkey Recipe

Sugar and salt cured beef jerkey, add spices as desired. Great for backpacking. Can be made kosher with kosher meat.

Recipe Ingredients for Simple Beef Jerkey

4.33 pounds Beef, Chuck, Clod Roast
3/4 cup brown sugar
1/4 cup kosher salt

Recipe Directions for Simple Beef Jerkey

  1. Slice roast into 1/4" thick strips. The roast I use is called shoulder roast. I'm sure it is a chuck roast, but I don't know if it is a chuck clod roast. Remove all the fat and any gristle that you do not want to chew. They make good chewing if you like that.

  2. Mix sugar and salt in large pot with 1/4 cup water to make a very thick pickle. The salt and sugar do not need to desolve.

  3. Add spices as desired--garlic powder, black pepper, cayenne, onion powder... Use a lot, i.e. a tablespoon each.

  4. Marinate the beef for a day in the pickle--be sure to cover all piece well and turnover a couple of times. I use a large stainless steel pot. Don't use cast iron, which can rust.

  5. Layout on racks of a dehydrator and dry at at least 145 degrees. You can also dry in a gas oven with a strong pilot light.

  6. Meat is done when it is hard and slightly translucent.

  7. Store in freezer for maximum freshness (to keep any remaing fat from going rancid over several months. It will keep on a backpack for weeks. If you are concerned about storage while backpacking, use more salt and less sugar. You will need the salt anyway if you are sweating all day.

  8. Although salty, it is not as salty as the Calorie Count program computes because much of the salt stay in the brine, which gets discarded at the end.

  9. The Calorie Count portion weight is also wrong. When dried, 4 pounds of beef will yield about 12 ounces of beef jerkey.
