Easy easy easy and good. I mixed vegetable and olive oils because I love the heart health benefits of olive oil, but vegetable oil is cheaper. Be sure you don't overbeat/whisk the olive oil: you'll "bruise" the flavor. In other words, it gets bitter rather than delicate. If you're going to eat good fat, it might as well taste good!

Recipe Ingredients for A Simple Balsamic Vinaigrette

2 tbsp olive oil
2 tbsp vegetable oil
2 tbsp dijon mustard
2 tbsp balsamic vinegar
1 tsp garlic, to taste

Recipe Directions for A Simple Balsamic Vinaigrette

  1. Mix mustard and vinegar with a fork or whisk.

  2. Add the garlic, if using. This might add a couple of calories, depending on how much you use.

  3. Measure the oil in a separate container (I used a shot glass).

  4. Slowly drizzle the oil in with the vinegar/mustard mixture, beating constantly with a fork. As mentioned above, don't overbeat! If you pour (or even dump) instead of drizzle, don't worry about it. It might affect the texture a bit, but it'll still taste good.

  5. Taste to check for flavor. Add salt, pepper, more mustard, or any seasoning you like, if needed.
