Simple Baked Cauliflower Recipe

This is one of my favourite recipes - I make this all the time for my family, but have a hard time not eating the whole thing myself :0)

Recipe Ingredients for Simple baked cauliflower

600 g Cauliflower
1 tbsp extra virgin olive oil, organic
1 tbsp butter
1 cup yogurt, 2.5%
1 cup bread crumbs, whole wheat
1 tsp salt

Recipe Directions for Simple baked cauliflower

  1. Steam the cauliflower (1 medium cauliflower should be cut in 4 flowerets before steaming it)

  2. When steamed to your liking (shouldn't be so soft it's falling apart) - turn your owen on 400 F and salt the cauliflower

  3. Coat the cauliflower with bread crumbs (I make my own from the whole wheat bread)

  4. Put the coated cauliflower in to the shallow baking dish that you coated with 1 tbsp of EVOO (extra virgin olive oil)

  5. Cut 1 tbsp of butter in thin slices and spread over the cauliflower

  6. Put in the oven

  7. When the top of the cauliflower mixture is golden-brown, mix 1 cup of yogurt with some of the water that you have from steamed cauliflower (I always save the water my vegetables steamed in to make my vegetable soups later) and pour over the cauliflower (the mixture of water and yogurt should be thick, but pour-able)

  8. Bake for another 10 minutes, and enjoy!
