Silky Butternut Squash Soup Weight Watchers

Recipe Ingredients for Silky Butternut Squash Soup

2 teaspoons olive oil
1 onion
750 g butternut squash
32 ounce reduced-sodium chicken broth
1 1/4 cups water
2 tablespoons thyme
1/4 cup fat free sour cream
4 teaspoons chives

Recipe Directions for Silky Butternut Squash Soup

  1. Heat oil in large pan. Cook onions until softened

  2. Add squash, chicken broth, water and thyme; bring to the boil and simmer until squash is very soft (about 20 minutes).

  3. Sieve the squash mixture out; reserve the liquid. Blend until smooth, adding back mixture slowly until mixture has the consistency of cream

  4. Return the soup to the saucepan and set over medium heat. Cook until heated (about 5 minutes). Remove from saucepan and stir in the sour cream.

  5. Ladle the soup into 4 bowls; top each serving with 1 teaspoon of the chives.
