Recipe Ingredients for Sides - Kim Chi

436 grams Napa Cabbage
15 grams morton's sea salt lookup
25 grams Red Pepper Chili Flakes
12 7/10 grams Minced Garlic
13 7/10 grams Minced Ginger
14 1/2 grams scallions
40 grams apple
45 9/10 grams pear
38 2/5 grams onion
12 grams water
113 3/5 grams water

Recipe Directions for Sides - Kim Chi

  1. Cut napa cabbage and place in bowl.

  2. Take salt and put in a cup of warm water.

  3. Pour salt water over cabbage and mix well. Let sit for four hours.

  4. Strain and wash cabbage very well. 3-4 times would be best.

  5. In a seperate bowl mix chili flakes (use gloves as it will burn your hands), minced ginger, minced ginger, and scallions in a bowl. Add to cabbage mix.

  6. Puree 1/2 cup of water, onion, apple and pear and pour over mix in bowl.

  7. Using gloves, massage mix into cabbage.

  8. Put in jars and let sit at room temperature for 24 hours so it can ferment. Be sure not to fill glass jars all the way up to the top as the kimchee tends to expand as it ferments.

  9. Refrigerate. Kimchee will keep for about 2 weeks in fridge.
