125 grams romaine
502 grams cucumber
12 grams morton's natural salt
19 4/5 grams scallion
9 3/5 grams Garlic
32 grams onion
5 grams Red Pepper Chili Flakes
7 2/5 grams Apple Cider Vinegar
8 1/5 grams Agave Nectar

Recipe Directions for Sides - Kim Chee Cucumber Romaine

  1. Chop cucumbers and romaine into bowl and add sea salt. Let sit for 24 hours at room temperature. This will dry out the moisture and help produce a natural brine.

  2. Now add minced raw garlic.

  3. Wash and chop up green onions .Add chopped green onions to the mix.

  4. For a little extra sweetness, chop up some yellow onion.

  5. Add fine red chili flakes.

  6. Now add vinegar.

  7. Add agave..

  8. Next, put on a pair of gloves (to protect your skin against the heat of the chili flakes) and give everything a good toss.

  9. Now pack your cucumber kim chi away into glass bottles, and don't forget to add a bit of brine to each one - just a couple of tablespoons of brine per bottle will do.

  10. All that's left to do at this point is to leave your bottles of cucumber kim chi out in room temperature for 24 to 72 hours to give it a chance to ferment. After 24 to 72 hours, transfer the bottles to your refrigerator.
