Sicola's Tomato Sauce Recipe

Makes 8 1/2 servings



You can either use 2, 14oz cans of crushed tomatoes or 10 Roma Tomatoes.

Recipe Ingredients for Sicola's Tomato Sauce

10 Roma Tomatoes
1 1/2 cup Tomato Sauce
3 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
4 oz Wine
1/2 cup Chicken Stock
2 tablespoon Thyme
2 tbsp Basil, Fresh
2 tbsp Basil, Fresh
2 tbsp Parsley
1 serving Coarse Kosher Salt

Recipe Directions for Sicola's Tomato Sauce

  1. In a large sauce pot, heat olive oil and saute onions until translucent. Add garlic and a pinch of season mix. Stir to incorporate. Let the onion and garlic mixture cook for about two minutes longer.

  2. Deglaze the pan with white wine. Let reduce by half. Add tomato products and stock. Reduce heat to low and simmer for 15 min. Adjust seasonings. Remove sauce from heat and add fresh herbs.

  3. If you are using fresh tomatoes they need to be blanched before going into the sauce. Bring 2 quarts of water to a simmer. Make a cross cut on the top of the tomato and take the stem out. Place in simmering water for 1 minute or until tomato skin starts to peel away from the flesh. Remove and shock in ice bath to stop cooking process. Remove skins and chop roughly. Add to sauce before you add the white wine and cook the onions and garlic for 8 minutes. Proceed with the recipe omitting 1 or both cans of crushed tomatoes.
