Recipe Ingredients for sicilian eggplant

2 eggplant
8 tbsp lemon juice
4 tbsp olive oil
2 medium onions
4 tomatoes
3 tbsp capers
2 tbsp sugar
1/4 cup balsamic vinegar
1/4 cup mint

Recipe Directions for sicilian eggplant

  1. Soak eggplant in cold water with lemon juice for 15 min. Drain.

  2. Saute eggplant in half oil until lightly browned.

  3. Saute onions in remaining oil until golden. Add tomatoes, eggplant and capers. Cover an simmer for 15 min. Add sugar and vinegar and simmer until vinegar has evaporated.

  4. Garnish with mint.
