Sicilian Caponata Recipe

Very fresh meal. Can be served with bread, or as a pasta sauce.

Recipe Ingredients for Sicilian Caponata

5 tablespoons olive oil
1 eggplant
1 onion
2 celery stalks
1 red pepper
5 large tomatoes
2 garlic cloves
2 tablespoons caster sugar
1 1/2 tablespoons balsamic vinegar
100 g green olives
50 g capers
50 g pine nuts

Recipe Directions for Sicilian Caponata

  1. Saute the eggplant, onion, celery and red pepper over high heat for 5 minutes.

  2. Drop the tomatoes in boiling water for 2 mimutes, remove, peel, remove the seeds acnd cut into chunds.

  3. Add to pan, with garlic, sugar, vinegar, olives and capers.

  4. Cook over high heat for 5-8 minutes.

  5. Scatter torn basil leaves over, with pine nuts and enjoy with fresh italian bread. :-)
