Recipe Ingredients for Sichuan-style Eggplant

400 g eggplant, raw
1/8 cup cooking wine
2 tsp. cornstarch
1/2 cup chicken stock
2 tbsp. soy sauce
2 tbsp. cider vinegar
1 tsp. chili oil, plus more to taste
2 tsp. sesame oil
1 tbsp. ginger,
4 garlic cloves,

Recipe Directions for Sichuan-style Eggplant

  1. Slice eggplant into 3 x 1/2-inch batons. Steam in a bamboo steamer set in a wok 15 minutes or until quite soft but not completely falling apart. Remove from wok and set aside.

  2. Meanwhile, whisk together cooking wine and cornstarch until smooth. Add stock, soy sauce, vinegar, and chile oil and stir until combined.

  3. After eggplant is steamed, pour water out of wok and set over high heat. Add 1 tsp. of oil and heat until beginning to smoke. Add garlic and ginger and stir-fry 30 seconds. Add eggplant and stir-fry briefly, then add sauce mixture, and bring to a boil. Reduce heat and simmer 20 minutes, stirring occasionally, until sauce is thick and glossy.
