Slightly spicy stir fry. Add sambal oelek if its too tame for your taste buds.

Recipe Ingredients for Sichuan Chicken with Peanuts

3 tbls chicken broth
1 tbls tomato paste
2 tsps rice vinegar or balsamic vinegar
1 tsp sugar
1 tsp low sodium soy sauce
1/2 tsp sesame oil
1/4 tsp cornstarch
1/4 tsp crushed red pepper
1 lb boneless skinless chicken breast, chopped
1 tsp rice wine or sherry
1 tsp low sodium soy sauce
1 1/2 tsp cornstarch
2 cloves garlic, minced
2 tsps ginger root, minced
1 tbls olive oil
2 cups (8 oz) sugar snap or snow peas
1/4 cup dry roasted peanuts
2 green onions, thinly sliced

Recipe Directions for Sichuan Chicken with Peanuts

  1. Mix first eight ingredients. This will be the sauce; set aside.

  2. Mix wine, second soy sauce, garlic, ginger and cornstarch. Add chicken, stir to coat. You can marinate for several hours before cooking if you like, or cook immediately.

  3. Heat oil in a wok or large pan until hot. Add chicken mix; stir fry until chicken begins to brown, about 3 minutes.

  4. Add sugar snap or snow peas. Stir fry an additional minute.

  5. Add sauce; stir and cook until sauce thickens, about 30 seconds to 1 minute.

  6. Add peanuts.

  7. Serve with green onions sprinkled on top.
