Recipe Ingredients for Siam Sweetpotatoes

1 1/2 pounds sweetpotatoes, peeled and cut into 1/2 inch pieces
1/2 cup onion, chopped
2 cloves garlic, minced
1 1/2 teaspoons grated fresh ginger root
1/2 teaspoon curry powder
1/4 teaspoon red pepper flakes
12 ounces evaporated skim milk
1/2 cup water
1/2 teaspoon salt
1/4 cup fresh cilantro, chopped

Recipe Directions for Siam Sweetpotatoes

  1. Cook sweetpotatoes in boiling water for 10 mins. Drain and set aside.

  2. Spray nonstick pan with PAM. Saute onion. Add garlic, ginger, curry powder, and pepper flakes; cook 3 minutes.

  3. Add the cooked sweetpotatoes, evaporated milk, water and salt. Heat to boiling, reduce heat and simmer 10 minutes.

  4. Garnish with cilantro.
