Spanish style shrimp and yellow rice recipe

Recipe Ingredients for Shrimp and yellow rice

1 pound shrimp (peeled, deveined and tail off)
3 cups brown rice (cooked)
1 medium onion (chopped)
1 medium red pepper (chopped)
1 medium tomato (chopped)
1/4 cup chicken broth
1/2 teaspoon garlic
1 tablespoon olive oil
2 grams chicken bouillon (half cube)
1 dash salt
1/2 teaspoon anato (saffron)

Recipe Directions for Shrimp and yellow rice

  1. Thaw shrimp completely if frozen by submerging in room temperature water. Drain completely once thawed.

  2. On a medium sized pot, heat the tablespoon of olive oil over medium high heat. Add the tomatos and salt, allowing to cook for about 30 seconds. Add red peppers and cook for another 30 seconds. Add onions and cook until golden. Add garlic and stir for about 1 minute.

  3. Add chicken broth, bouillon and saffron to the pot. Stir and continue cooking, in order to reduce the broth, so that the vegetables are mushy but not runny.

  4. Add shrimp and cook for about 1 minute and a half, or until they are pink (be careful to not overcook them, they become gummy if overcooked).

  5. Add rice and mix well, to ensure the rice turns of a yellow/orangy color (about 1 minute or 2).

  6. Remove from heat.
