Dinner. I use fresh salsa, not the jar kind. Its just a blend of fresh onions & tomatoes chopped up. It doesn't taste like salsa from a jar - its just easier than chopping up tomatoes & onions myself. If you don't have fresh salsa I would use tomatoes & onions in place of the salsa.

Recipe Ingredients for Shrimp & Veggies Fried Rice

3 ounces shrimp (frozen)
43 grams brown rice (1 cup cooked Success Rice)
35 grams broccoli
140 grams squash, summer
40 grams carrots
2 T salsa, fresh
1/4 tsp chili powder
1/4 tsp garlic powder
1/4 tsp cumin

Recipe Directions for Shrimp & Veggies Fried Rice

  1. Cook rice according to directions on package. I use the Success Boil in Bag type - takes 15 minutes to cook.

  2. While rice is cooking thaw shrimp in warm water and chop up all vegetables.

  3. Microwave vegetables with a small amount of water for about 1-2 minutes. They still should be crunchy and crisp.

  4. Heat a wok or frying pan on high heat. When rice is done combine veggies, shrimp & rice and add to wok.

  5. Stir fry for about 2-3 minutes. Add fresh salsa and cook for an additional 30 seconds.
