Great quick meal for left over veggies. You can substitute other favorite vegetables. This version is very hot if you do not like spicy do not add the hot peppers and cayenne. You can replace with garlic powder, and ginger.

Recipe Ingredients for shrimp and veggie stir fry - hot

20 shrimp
1 tbs worcestershire
1/2 cup white wine
2 tsp cayenne pepper
3 dried red peppers
1 cup celery
1 cup onion
1 cup chard
1 cup broccoli
2 cup cabbage
2 carrots
2 tbs peanut oil
2 tbs olive oil

Recipe Directions for shrimp and veggie stir fry - hot

  1. Devein and peel shrimp

  2. add shrimp, cayenne, and worcestershire in bowl mix and set aside.

  3. chop all vegetables into 1 inch pieces (slice carrots thinner to reduce cook time)

  4. In wok heat peanut oil on high heat

  5. add chopped dried red peppers to oil for 1 minute then shrimp mixture. Cook stiring constantly until shrip turn pink, approximately 4 minutes. Remove shrimp from wok back into bowl and set aside.

  6. add olive oil to wok and onion, celery, carrot, reduce heat to medium high, cook sitrring constantly until semi translucent. about 4 minutes.

  7. Add broccoli, cabbage, chard and wine to wok and stir until chard is wilted about 2 - 3 minutes.

  8. Add cooked shrimp mix with juice to veggies, toss and serve.

  9. You can server this with rice or noodles not included in total calories.
