Shrimp and vegetables in a light and tangy tomato sauce over whole wheat penne pasta. Serving size is around 1 cup per.

Recipe Ingredients for Shrimp & Veggie Penne Pasta

7 oz or half box Ronzoni Healthy Harvest Penne Rigate
1/4 cup Green Pepper
1/4 cup Red Bell Pepper
1/4 cup Orange Bell Pepper
1/4 cup Yellow Bell Pepper
6 Green Onions
1 cup diced tomatoes
2 tbsp Extra Virgin Olive Oil
1/4 cup Tomato Sauce
1 tbsp Lemon Juice
1 tbsp Minced Garlic
1 pound Shrimp

Recipe Directions for Shrimp & Veggie Penne Pasta

  1. Cook Noodles according to package directions.

  2. Saute peppers, onions, and garlic, in olive oil.

  3. Stir in diced tomatoes, lemon juice, and tomato sauce.

  4. Season with Italian seasoning, basil, onion powder, and garlic salt to your liking.

  5. Simmer 5-10 minutes.

  6. Serve over penne pasta.
