Recipe Ingredients for Shrimp Veggie Pasta

12 ounces bowtie pasta
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 small red onion, diced
1/4 cup pine nuts, toasted
2 tablespoons olive oil
7 shrimp

Recipe Directions for Shrimp Veggie Pasta

  1. For Shrimp and Veggie Pasta

  2. 1. Cook pasta until it reaches desired tenderness. Toss with 1-tablespoon olive oil and set aside.

  3. 2. Heat 1-tablespoon olive oil, peppers and onions in a skillet on medium-high heat until they have caramelized slightly.

  4. 3. In a separate small saucepan, heat pine nuts on medium heat and watch carefully. Remove from heat when they begin to change color, but before they turn completely brown. Set aside.

  5. 4. Season shrimp with salt and pepper and sauté in olive oil for 3 minutes on each side.

  6. 5. Add shrimp, pine nuts, caramelized veggies and garlic paste to the pasta.

  7. 6. Sprinkle basil and crushed red pepper over the top. This dish is great served warm or at room temperature.
