I eat this in a torilla and with pico de gallo (a Mexican salsa). You can add cheese if you want. I use already cooked shrimp.

Recipe Ingredients for Shrimp veggie fajitas

97 grams shrimp
1 teaspoon olive oil
1/4 cup green peppers
1/4 cup yellow onion
1 teaspoon lemon juice
1 dash cayenne pepper
1/4 teaspoon ground pepper
1 garlic clove
1/2 large carrot
1/4 teaspoon dill
1/4 teaspoon oregano
3 tablespoons plain yogurt
1/2 avocado

Recipe Directions for Shrimp veggie fajitas

  1. Heat oil in frying pan.

  2. Add carrots and cook for a couple minutes.

  3. Add onions and peppers and a small amount of water (so veggies are steamed). Cook until mostly done.

  4. Add shrimp, garlic clove, lemon juice, and other seasonings. Cook until carrots are soft and shrimp is warm, but not overcooked.

  5. Serve in a warm tortilla with the plain yogurt (which is a great substitute for sour cream), pico de gallo, avocado slices, and perhaps some cheddar or monterey jack cheese.
