Recipe Ingredients for shrimp vegetable rice

1 cup uncooked basmati rice
1/2 medium onion, chopped
1 cup sweet bell peppers, chopped
1 tbsp garlic, minced
6 oz. shrimp, cooked
1 cup waterchestnuts
1/2 cup peas
1 cup broccoli, steamed
1/2 cup carrot, chopped
1/4 cup celery, chopped
1 tbsp olive oil
1/8 cup reduced sodium soy sauce
1/8 cup honey
2 tbsp lime juice
1/2 tsp pepper
1/4 tsp ground ginger
1/4 tsp dried basil
1 tbsp corn starch

Recipe Directions for shrimp vegetable rice

  1. Cook rice and set aside.

  2. Steam broccoli and carrots.

  3. In a large pan, saute the rest of the vegetables in the olive oil until tender.

  4. Add soy sauce, honey, lime juice, corn starch and spices.

  5. Bring to a boil.

  6. Let simmer and stir until thickened.

  7. Add shrimp and cook a few more minutes.

  8. Pour on top of rice.
