This is traditional Japanese Tempura dish. You may use the following seefood or vegetables in 5.5 ounce portions: shrimp, horse mackerel, sillago, scallops, sardines, goby, baby aillago green peppers, carrots, onion, potato, string beans, egg plant, lima beans, etc....whatever is at hand. For fish split open the back or the front and remove all bones. You may also slash through, but not completely. String beans -- if too long cut into 2-inch pieces. Gsther 2 or 3 beans togetehr for batter. NOTE: Ham may also be good for tempura. You may also substitute salt and lemon for tempura sauce.

Recipe Ingredients for Shrimp Tempura


Batter:
1 egg
1/2 cup ice water
1 cup flour, sifted

Ingredients:
5 1/2 ounces shrimp
5 1/2 ounce sweet potatoes
5 1/2 ounces carrots, cut in wedges
5 1/2 ounces mushrooms, whole

Sauce:
1/4 cup rice wine, sweet, Mirin
1 cup soup stock or dashi
1/4 cup soy sauce

Seasoning:
6 tbsp radish, grated, white, Japanese
1 tbsp ginger, grated, powder

Recipe Directions for Shrimp Tempura

  1. Prepare ingredients: Remove head and shell of shrimp, keeping tail intact. Remove tip of tail. Make 3 or 4 slits on flank. Slice carrots and sweet potatoes into fine strips, leave mushrooms whole.

  2. Make batter just before cooking. Beat eggs, add cold water and sifted flour all at once. Mix with chopsticks thoroughly, do not over mix.

  3. Heat oil in thick, deep pan to 370 degrees F. Coat ingredients in batter and deep fry a little at a time. Take care not to fry to much at a time or temperature will drop. Turn over with chopsticks. Fry until crisp. Ingredients should be fried first fish then vegetables.

  4. For sauce, boil mirin; add soup stock and soy sauce, simmer. Sieve liquid.

  5. Grate radish; drain on mesh. Grate ginger and mix with radish.

  6. Spread dish with paper; arrange tempura; serve with sauce, radish and ginger mix.
