A smaller lighter, lower fat, smaller portioned version of a Ruby Tuesdays idea for baked tilapia, pasta, shrimp and alfredo.

Recipe Ingredients for Shrimp & Talaipa Alfredo Fettuccine

1/4 lb Tilapia fillets
1/2 cup light alfredo sauce
1/4 lb shrimp
1 tbsp old bay
2 sweet red pepper
2 tbsp olive oil
2 tbsp promise spread
2 cloves garlic
3 tbsp parmesan cheese
4 oz Whole Wheat Fettuccine

Recipe Directions for Shrimp & Talaipa Alfredo Fettuccine

  1. Preheat oven to 425

  2. Start to prepare pasta as directed

  3. Shell and clean shrimp. Set aside.

  4. Mince garlic. Set aside.

  5. cut red pepper into slivers and saute in Promise spread and salt

  6. Meanwhile, rinse and dry tilapia

  7. Coat tilapia with olive oil and sprinkle with Old Bay

  8. Place in oiled baking dish

  9. Bake for 8 to 10 minutes just ubtil white

  10. As fish is baking, saute shrimp in Promise spread and minced garlic

  11. Heat Alfredo sauce in saucepan or microwave

  12. When fish is ready, remove to two plates

  13. Put 1/2 of the red pepper and 1/2 the shrimp on top of each fillet half

  14. Pour alfredo sauce over all

  15. Top with grated parmesan cheese.

  16. Place under broiler just to melt the cheese if desired.

  17. Add pasta to each plate and serve
