make pico ahead: tomatoes, onion, pepper, corn, celery, with jalapeno (jarred, with some juice), lemon juice & salt saute shrimp lightly cook tortilla, melt cheese on it, top with shrimp & shredded cabbage

10 shrimp
1 tablespoon oil
2 flour tortilla
1/8 cup tomatoes
1/8 cup celery
1/8 cup corn
1/8 cup bell pepper
1/8 cup yellow onion
1/4 cup green cabbage
1/4 cup shredded cheddar cheese
