Recipe Ingredients for Shrimp Tacos

1 lb shrimp
1 avocado, diced
3 green onions, sliced thinly
1/4 cup lemon juice
1/4 cup feta, crumbled
1/4 head green cabbage, shredded
2 tsp olive oil
1/4 tsp cumin
1/4 tsp oregano, ground
1/4 tsp salt
1/8 tsp pepper
4 corn tortillas
1/4 cup salsa

Recipe Directions for Shrimp Tacos

  1. Bring large pot of water to a boil. Toss in peeled shrimp and cook until just done. Drain and rinse with cold water to stop cooking.

  2. Toss shrimp with avocado, green onions, feta, lemon juice, cumin and oregano.

  3. In another bowl, toss cabbage with olive oil, salt and pepper.

  4. Using tortillas, build tacos with a scoopful of shrimp filling, a scoop of cabbage and a spoonful of salsa. Fold tortilla and eat.
