Quick, delicious and colorful broiled shrimp

Recipe Ingredients for Shrimp with Sundried Tomatoes

1/4 cup olive oil, extra virgin
1 tbsp garlic, minced
1 cup sundried tomatoes, chopped
2 tbsp capers, drained
1/2 cup white wine
24 shrimp, peeled
1/2 cup basil, chopped

Recipe Directions for Shrimp with Sundried Tomatoes

  1. Preheat broiler with rack set 2-4 inches from heat source.

  2. Put oil in large, ovenproof skillet over medium heat. Add thyme, garlic, tomatoes and capers. Cook just until mixture sizzles, then add wine. raise heat and bring to boil. Cook about one minute, then add shrimp, turning them in sauce.

  3. Put skillet under broiler and cook until shrimp are done, 3-5 minutes, turning once. Sprinkle with salt and pepper, garnish with basil, serve hot.
