Recipe Ingredients for shrimp with sundried tomatoes and artichokes with Penne pasta

14 oz. ronzoni healthy harvest penne rigati
3 1/2 oz. sun dried tomatoes
1 can artichoke hearts
1/4 cup white wine vinegar or 1/2 C dry white wine
1/4 c white grape juice
3 T lemon juice
3 garlic cloves
1 T. olive oil
6 cups fresh spinach
2 T pesto
1 lb. chicken breast or 1 lb. shrimp, cooked

Recipe Directions for shrimp with sundried tomatoes and artichokes with Penne pasta

Cook Pasta as directed. If using white wine, omit vinegar and grape juice.Cook all ingredients except pasta, shrimp and spinach until liquid is reduced by half. Add spinach and cook until wilted. Add shrimp and pasta. Cook further until most of the liquid is absorbed. Serve hot or cold with parmesan if desired.
