Shrimp Stuffed Vegetables Recipe

Recipe Ingredients for Shrimp Stuffed Vegetables

6 small tomatoes
3 zucchini
2 tbsp olive oil
8 oz feta cheese
2 sweet peppers
1 onion
1 lb. shrimp
2 stalks celery
1/2 cup rice
1 cup chicken broth
2 tbsp lemon juice
1 tbsp dill
1 tbsp parsley
1 large egg

Recipe Directions for Shrimp Stuffed Vegetables

  1. Cook rice in broth. When done, place in large bowl. Meanwhile, blanch zucchini and sweet peppers for 10 minutes. Dice onion and celery. Chop shrimp. Set aside veggies and shrimp, keeping separate. Cut tops and stem from tomatoes. Scoop out seeds and add with shrimp. When done, halve sweet peppers or just remove tops. Cut zucchini in half lengthwise and scoop out most of insides and put with shrimp and tomatoes, making into a long bowl.

  2. Sautee celery and onion over medium in 1 tbsp olive oil until softened. Add shrimp mixture, salt and pepper and cook until shrimp is just opaque. Add to large bowl with rice. Add crumbled feta cheese and egg with dill, parsley, salt, pepper, olive oil and lemon juice. Stir to combine well.

  3. Add mixture to hollow tomatoes, peppers, and zucchini. Place on baking dish and bake 25-30 minutes at 375.
