Recipe Ingredients for Shrimp Stir Fry

3 t sesame oil
2 t low sodium soy sauce
3 garlic cloves, minced
2 t canola oil
2 lb large shrimp, peeled and deveined, thawed
2 T ginger, minced
1 lb white mushrooms, quartered
6 scallions, cut into 1 inch strips
1 large bell pepper, cut into thin strips (any color)
8 oz snow peas
1/4 t red pepper flakes
2 T soy sauce

Recipe Directions for Shrimp Stir Fry

  1. Marinate the thawed shrimp in the sesame oil, 2t soy sauce, and garlic for about an hour.

  2. Spray a wok with cooking spray, put over high heat, cook shrimp until pink. Transfer to a plate.

  3. Add the canola oil to wok, high heat. Add ginger for 30 secs, then the rest of the veggies and red pepper flakes for about 5 minutes or so, the vegs should still be crisp.

  4. Stir in shrimp and remaining soy sauce. Serve hot.
