A quick and simple stir fry for the shrimp lover!

Recipe Ingredients for Shrimp Stir Fry

2 cups brown rice
4 cups water
3/4 cup carrots, diced
3/4 cup celery, sliced
1 green bell pepper, diced
2 tbsp. olive oil
1 tbsp. rice vinegar
6 oz. shrimp
6 tsp. soy sauce, light

Recipe Directions for Shrimp Stir Fry

  1. Cook brown rice using water according to package instructions.

  2. Add 1 tbsp. olive oil to skilet over medium heat. Once oil is hot add carrots, celery and bell pepper. Add rice vinegar and let simmer until softened but still firm. Set aside.

  3. Using the same skillet over medium heat saute shrimp until golden brown on outside.

  4. Combine rice, vegetables and soy sauce with the sauted shrimp in skillet and let it fry, stir constantly.
