Shrimp Taco- Can be changed to suit your taste. Use a whole grain or low carb tortilla to make it even healthier. Spice measurements are estimations and vary depending on how much you like to use.

Recipe Ingredients for Shrimp, Spinach, and Black Bean Taco

3 oz Large Shrimp, raw
0.25 cup, chopped Peppers, Sweet, Red
1.5 cup Spinach
1 serving Black Beans
1 Teaspoon Juice
1 tsp Garlic Powder
0.5 serving Ground Cumin
0.25 tbsp Extra Virgin Olive Oil
1 tortilla Burrito 10" Flour tortillas 14ct

Recipe Directions for Shrimp, Spinach, and Black Bean Taco

  1. Peel, de-vein/tail shrimp. Chop Red pepper.

  2. Add 1 tsp of oil to pan, heat, add bell pepper. Season with salt. Cook till tender. Set aside.

  3. Add Spinach and cook till wilted, seasoning with salt, a little cumin, and sprinkling of lemon juice. Set aside.

  4. Add remaining oil, heat, and add shrimp, seasoning shrimp with garlic, salt, cumin. Cook till done. Sprinkle with lemon juice. Add spinach and red pepper. Bring everything back to heat and set aside, keeping warm.

  5. In same skillet, add black beans, bring to a slight simmer, seasoning with lots of garlic, cumin, salt and pepper to taste. Once hot, using the back of your spoon, mash some of the black beans. Cook till thick and warm.

  6. Take your tortilla and heat as desired. Fill with the spinach and shrimp mixture and black beans. Fold and serve. Can serve with cheese, salsa, sour cream, etc; Enjoy!
