Garlicky shrimp in a corn starch thickened chicken broth sauce to serve with rice or pasta 1/2 c serving

Recipe Ingredients for Shrimp sort of Scampi

2 c chicken broth
21 g garlic
472 g tomato
190 g onion
20 g olive oil
16 oz shrimp
1/4 c corn starch

Recipe Directions for Shrimp sort of Scampi

  1. saute onions and half garlic (crushed) in olive oil

  2. add spices as desired (I use dehydrated basil and oregano, a bit of salt/pepper to taste (can be added later))

  3. While sauteing, quarter grape tomatoes

  4. Add tomatoes when onion is translucent or just before

  5. Saute until tomatoes start to concentrate a bit

  6. Add broth (I use low sodium, but could not use the item for values in the recipe due to measurement issues with CC)

  7. Bring to boil, add shrimp (I used precooked, so I just had to defrost them)

  8. Mix corn starch with water and shake until smooth

  9. Add corn starch mixture to broth once the shrimp is done cooking/defrosting

  10. Heat on low until corn starch thickens

  11. Serve over pasta/rice/veggies

  12. De-shelling the shrimp makes this a much less messy meal!
