note: the udon noodles I used are by penguin brand, and are 100 cal for TWO ounces..half what most are, so be aware if using this recipe

Recipe Ingredients for shrimp scampi with udon noodles

1 lb medium shrimp, peeled and deveined
1 c water
8 cloves garlic
1 T cornstarch
1 c fresh mushrooms
1/2 medium onion
1 pinch dried basil
1/4 tsp dried oregano
1 tsp dried parsley flakes
3 oz udon noodles
2 T lemon juice
1 T chicken soup mix
1 salt and pepper

Recipe Directions for shrimp scampi with udon noodles

  1. Plasce udon noodles into pan of boiling water and boil until done. drain. In another pan, Saute mushrooms, onion, and garlic in oil. add water, spices, and chicken soup mix. Saute until vegies are tender. Add shrimp and saute until pink. Mix cornstarch with small amount cold water and add to pan, stirring until sauce is thickened. Add lemon juice. Add noodles to shrimp and stir together. Serve.

  2. Good served with 1T parmesan cheese per serving for additional 20 calories
