Recipe Ingredients for Shrimp scampi

6 tablespoons butter , unsalted, at room temperature
1/4 cup olive oil
1 tablespoon garlic, minced
1 tablespoon shallots, minced
2 tablespoons chives, snipped
1 Salt to taste
1 Black pepper, freshly ground, to taste
1/4 teaspoon paprika
2 pounds shrimp, large, peeled and veined

Recipe Directions for Shrimp scampi

  1. Preheat the broiler.

  2. Combine the butter, olive oil, salt, pepper, garlic, shallots, chives in a large bowl.

  3. Blend thoroughly.

  4. Toss the shrimp in the mixture until thoroughly coated.

  5. Broil for 2 minutes, close to the flame.

  6. Serve over brown rice or whole wheat pasta.
