Easy shrimp scampi. Use 6 tbsp of light land lakes butter instead... :/

Recipe Ingredients for Shrimp Scampi

500 g cooked frozen shrimp
1/4 cup chopped onion
2 cloves of chopped garlic
3 tbsp light butter
1 tbsp lemon juice
10 g of chopped parsley
1 salt and pepper

Recipe Directions for Shrimp Scampi

  1. Saute onion, garlic, parsley and other vegetables in butter until tender. Reduce heat and add shrimp, stirring frequently about 5 minutes. Remove shrimp to bowl with slotted spoon. Add other ingredients; simmer 2 more minutes. Then add saved shrimp.

  2. Serve over fettuccine with a Caesar salad and garlic bread. Can sprinkle with Parmesan cheese before eating. Enjoy. (Can also use chicken instead of shrimp.)
