Shrimp scampi with garlic, parsley, lime juice and olive oil.

Recipe Ingredients for Shrimp Scampi

18 large shrimp
1/4 cup i can't believe it's not butter
3 tbsp extra virgin olive oil
3 garlic cloves
1 tbsp scallion
1 tbsp parsley
1 1/2 tbsp lime juice
1 Salt and Pepper to taste

Recipe Directions for Shrimp Scampi

  1. Lightly season shrimp with 1/2 tbsp lime juice, salt and pepper.

  2. Saute garlic and scallion in butter and olive oil until tender.

  3. Add shrimp and remaining lime juice. Saute until the shrimp turns pink. Add parsley and season to taste.

  4. Simmer for 5 minutes.
