Delivcious with fresh shrimp! Can add or substitute vegetables -- such as spinach instead of parsley, add tomatoes, etc.

Recipe Ingredients for Shrimp Scampi Linguine

1/2 lb linguine pasta, uncooked
1 tablespoon olive oil
1 cup portobella mushrooms, sliced
1 medium tomato, chopped
2 cloves garlic, minced
1/2 teaspoon oregano
1/4 cup white wine vinegar
2 lb large shrimp, peeled
1 Lemon (47 g) Juice (lemon+yields)
1 cup parsley, minced
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes

Recipe Directions for Shrimp Scampi Linguine

Cook pasta. Saute vegetables in oil with garlic and oregano. Add wine vinegar or white wine and cook a minute or two. Add shrimp and cook 1-2 minutes until pink. Remove from heat, add remaining ingredients and toss with pasta.
