Shrimp scampi in a buttery, tomatoe sauce.

Recipe Ingredients for Shrimp scampi for 2

6 oz uncooked shrimp
2 tbsp lemon juice
1/2 tsp oregano
1/4 tsp black pepper
5 cloves garlic
1/8 cup oil, olive, light
1/8 tsp salt
2 tbsp Smart Balance buttery spread
1 cup Del Monte stewed tomatoes, original recipe

Recipe Directions for Shrimp scampi for 2

  1. Saute garlic in butter and olive oil

  2. Add shrimp and cook until pink

  3. Add lemon juice

  4. Mix all dry ingredients with stewed tomatoes and add to pan and heat to boiling point

  5. Serve over wheat linguine
