Recipe Ingredients for Shrimp & Scallop Posole

1 tbsp olive oil
1 cup onion, chopped
3 garlic cloves, minced
3 cups bottled clam juice
15 ounce white hominy, drained and rinsed
1 cup salsa (verde)
2 tbsp sun-dried tomatoes (in oil), finely chopped
1 tbsp lemon peel, finely grated
1 pound uncooked shrimp, peeled and deveined
1 pound sea scallops, halved horizontally
4 tbsp cilantro, chopped and divided

Recipe Directions for Shrimp & Scallop Posole

  1. Heat oil in a large deep skillet over medium high heat. Add onion; saute until tender, about 5 minutes. Add garllic, stir about 30 seconds. Add 3 cups clam juice and next 4 ingredients; simmer 5 minutes.

  2. Add Shrip, scallops, and 3 tbsp cilantro to simmering broth, adding more clam juice to thin if necessary.

  3. Simmer until seafood is just opaque in center, about 3 minutes. Season with salt and pepper.

  4. Divide among bowls; sprinkle with remaining cilantro.
