Recipe Ingredients for shrimp & sausage jambalaya

3 tbsp shortening
2 tbsp flour
1 1/2 cups onions, chopped
1/2 cup green pepper, chopped
1 cup celery, chopped
1 clove garlic
1 tsp salt
1 tsp red pepper
2 1/2 cups water
1 lb large shrimp
1 lb andouille sausage
14 1/2 oz diced tomatoes
8 oz tomato sauce
2 cups raw rice

Recipe Directions for shrimp & sausage jambalaya

  1. Heat shortening, add flour and let it cook slowly-until golden brown-stirring constantly. Add onions, pepper, garlic & celery; cook until transparent-stirring often. Add tomatoes and tomato sauce and let cook until oil rises to the top. Stir in raw rice, sausage, water, and raw shrimp.

  2. Cook, covered, over low heat until rice is tender (about 20 minutes). Add more water if mixture appears to be too dry. Serve.
