Makes 12 servings



Add 100 calories per serving to include 16 oz. turkey sausage. 199 + 100 = 299 calories per serving. If you serve with rice you must add the rice calories also.

Recipe Ingredients for Shrimp/Sausage Gumbo

2 cup onion, chopped
1 1/2 cup green pepper, chopped
2 cloves garlic, minced
2 T vegetable oil
1/2 cup flour
1/2 cup vegetable oil
32 oz chicken broth
30 oz diced canned tomatoes, undrained
10 oz spinach
1 T dried thyme
1 tsp salt
1 tsp pepper
1 tsp hot sauce
1 pound shrimp

Recipe Directions for Shrimp/Sausage Gumbo

  1. SAUTE: sausage & next 3 ingred. in 2 T oil in large Dutch oven over M-H heat for 7 minutes or until sausage is brown and veg tender. Rrmove mixture.

  2. STIR: flour, 1/2 cup oil in Dutch oven & cook over M heat, stirring constantly, 20= minutes or until mixture is a dark caramel color.

  3. Gradually stir in chicken broth, sausage mixture, 2 cans tomatoes, spinach, typme & next 3 ingredients. Bring to boil. Cover, reduce heat and simmer, stirring occassionally, 25 mninutes.

  4. Add shrimp. Cook 5 minutes .

  5. Serve over hot cooked rice.
