Shrimp with couscous and mango salsa

Recipe Ingredients for Shrimp and Salsa

8.8 oz Large Shrimp, raw
4 cups Baby Spinach
0.5 cup dry Original Couscous
1 serving Extra Virgin Olive Oil
0.5 fruit without refuse Mangos
0.5 avocado, NS as to Florida or California Avocados
1 small whole (2-2/5" dia) Tomatoes, Red, Ripe
0.13 cup chopped Red Onion
0.5 pepper Peppers, Jalapeno

Recipe Directions for Shrimp and Salsa

  1. heat gril

  2. fold 2 pieces of foil in half, coat inside with cooking spray

  3. place 2 cups spinach in center of foil

  4. combine couscous with 1/8 cups water; divide evenly among packets

  5. combine shrimp, cilantro oil and salt in a bowl; divide among packets

  6. fold foil to close and crimp edges to seal; place on grill; close lid; cook until packets are fully puffed 10 min.

  7. combine cilantro with salt, mango, avocado, tomato, onion, jalapeno and lime juice in bowl.

  8. cut packets open stir contents and top with salsa
