A single serving of shrimp salad for lunch or dinner

Recipe Ingredients for Shrimp salad for one

3 oz cooked shrimp
2 tbsp mayo
2 tbsp chopped onion
3 tbsp chopped celery
1 salt
1 pepper

Recipe Directions for Shrimp salad for one

  1. Cook shrimp (I cook by the pound to make multiple servings) in boiling water until pink and firm (about 5 - 9 minutes depending on size used). Cool completely when done.

  2. Chop one stick celery, washed and rinsed.

  3. Chop 4-6 tbsp sweet onion.

  4. Take cooled shrimp and remove all shell, legs and clean vein if necessary. Cut into bite sized pieces and place in mixing bowl.

  5. Add enough mayo to moisten completely. Add as much as your personal preferences call for, but remember ~ the more mayo you use the higher the calories!

  6. Add celery and onion to shrimp mix.

  7. Add salt and pepper to taste.
