Shrimp Risotto from "Simple & Delicious"

Recipe Ingredients for Shrimp Risotto

0.5 cup, chopped Onions
1 tbsp Butter
1.75 cup dry Brown Rice
2 clove Garlic
0.5 tsp, ground Basil, Dried
1 dash Pepper, Black
30 oz 99% Fat Free Chicken Broth
16 oz Cooked Shrimp
2 cups Baby Spinach
1 cup Corn, Sweet, Yellow
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.25 cup Parmesan, Grated Cheese

Recipe Directions for Shrimp Risotto

In a large skillet, saute onion in butter until tender. Add the rice, garlic, basil, and pepper; cook 2 minutes longer. Stir 1/2 of the broth. Cook and stir until most of the liquid is absorbed. Add the remaining broth, 1/2 C at a time, stirring constantly. Allow the liquid to absorb between additions. Cook until risotto is creamy and rice is tender. Stir in the remaining ingredients; cook and stir until spinach is wilted and shrimp are heated through.
