Shrimp Risotto Recipe

Flavorful Shrimp Risotto. Not great for low calories, but good in everything else and fancy too!.

Recipe Ingredients for Shrimp Risotto

3 cups shrimp stock
1 tsp olive oil
2 tbsp butter
1/2 cup onion, chopped
2 tsp garlic, minced
3 oz shrimp, cleaned (about 1/2 cup) salad type
3/4 cup arborio rice
1/4 cup dry white wine, (dry vermouth preferred)
1/2 cup green peas
1/2 cup parmesan cheese, shredded finely
2 tbsp italian parsley, chopped finely
1 tbsp truffle oil

Recipe Directions for Shrimp Risotto

  1. In a small sauce pan, heat the broth, then set it on low (simmer). You want it just hot, not boiling.

  2. In a sauce pan, heat up the olive oil, then add the butter. Let it melt.

  3. Once the butter is smelling nutty, add the onions and the garlic and sautee them until they are fragrant. I particularly like them a bit brown.

  4. Add the shrimp and let it sautee for about a minute.

  5. Add the rice, and let it brown/toast a bit. This will give it a fragrant nutty flavor. Keep an eye on the rice at this point, you don't want to burn it.

  6. Once you got some of the grain toasted, add the dry white wine. I prefer dry vermouth for this. Let it be absorbed.

  7. At this point, you will start spooning in with a ladle the warm broth into the rice, adding a new ladle once the liquid is absorbed. The rice will start to get creamy as you add the liquid. Fold the rice softly as you add the liquid. Taste the rice as you go.

  8. When the rice is about fully cooked, add the peas, half the cheese and half the parsley to the rice and fold softly.

  9. The consistency of the rice should be creamy, not soggy. If there is extra liquid, let the liquid reduce a bit.

  10. Serve immediately and garnish with the remaining cheese, parsley and a small bit of truffle (or truffle flavored) oil.
