Tasty breakfast food or appetizer, with eggs and egg substitute, italian blend cheese, shrimp, and, of course, Old Bay seasoning! Less than 75 calories each!

Recipe Ingredients for Shrimp Quiche

4 oz shrimp, pre-cooked, thawed & drained, chopped fine
1 oz onion, chopped
1 1/2 oz mushrooms, chopped fine
5 black olives, chopped fine
10 oz frozen spinach, thawed and well-drained
3 eggs
6 oz Fit & Active egg substitute
3/4 cup 1% milk
3/4 tsp Italian Seasoning
3/4 tsp garlic powder
1/2 tsp onion powder
13/20 g (1/4 tsp) salt substitute
1/4 tsp dill
1/4 tsp chopped red pepper
1/2 tsp Old Bay seasoning
1/4 cup seasoned bread crumbs
1/4 cup reduced fat cheddar cheese
1 cup Italian blend cheese

Recipe Directions for Shrimp Quiche

  1. Preheat oven to 350-degrees.

  2. Chop shrimp and set aside in large bowl.

  3. Spray small skillet with non-stick cooking spray, and warm over high heat. Reduce heat and add finely chopped onions, mushrooms, and olives. Cook until just tender, about 5 minutes.

  4. Add vegetables, together with spinach to shrimp in large bowl and mix well.

  5. In small bowl, combine eggs, egg substitute, milk, and seasonings and beat until well-blended.

  6. Spray 9 X 9-inch baking pan with non-stick cooking spray. Sprinkle bread crumbs over bottom of pan.

  7. Combine cheeses and mix well; sprinkle half cheese mixture over bread crumbs.

  8. Pour egg mixture over cheese and gently spread evenly in pan.

  9. Bake for 25-30 minutes.

  10. Sprinkle remainder of cheese over top of quiche. Return to oven and cook an additional 5 minutes or until toothpick inserted in center comes out clean.

  11. Cool for at leat 10 minutes. Cut and serve.

  12. NOTE: To cut triangles: cut quiche into 4 squares. Cut an "X" in each square, creating triangles. FOR APPETIZERS: Cut each triangle in half again, making 32 appetizer-sized triangles. Store well in air-tight container.
