Recipe Directions for Shrimp Quiche

  1. To Make Pastry:

  2. Put flour into a bowl with pepper and salt. Cut the butter into the flour using a pasry cutter unil well incorporated and mealy looking. Add ice water in small amounts until mixture froms a ball that just holds it's shape. (you may not need all of the water or a little more than the amount the recipe calls for) Turn onto a lightly floured surface and roll into a circle rougly the size of your pie or torte pan. Roll dough ito pan and poke hole in bottom. Bake at 400F until shell looks golden brown.

  3. To Make Filling:

  4. Mix eggs in a bowl with whipping cream and a pinch of salt until well mixed. Grate cheese over the pie shell you just baked. (you can use any kind of cheese you like, I often switch between mozza and brie)Pat shrimp (or other seafood) dry with a paper towel and lay evenly over cheese. Pour egg mixture over top and bake for about an hour. Until center is set and no longer wobbly.
