Creamy vegetable soup with shrimp.

Recipe Ingredients for Shrimp and potato soup

2 tbsp butter
2 tbsp olive oil
2 medium carrots
2 tbsp flour
12 small red potatoes
2 cups skim milk
2 cups chicken broth
1 celery stalk
1 salt
1 pepper
3/4 pound medium shrimp
4 strips bacon
1/2 cup cheddar cheese

Recipe Directions for Shrimp and potato soup

  1. Melt butter and olive oil, saute onion, carrots and celery until tender about 5 minutes. Whisk in flour and cook one minute, then add broth, milk and potatoes. Simmer 15 minutes until potatoes are very soft and dissolving. Season to taste with salt and pepper.

  2. Meanwhile, bring 2 cups lightly salted water to a boil. Add shrimp and watch until barely pink, slightly undercooked. Chop roughly and add to soup. Serve with bacon bits and grated cheddar cheese.
