A nice light soup. Perfect for those moments when you need food fast.

Recipe Ingredients for Shrimp & potato soup

1 onion
1 tablespoon vegetable oil
4 potatoes, peeled and cubed
1 bunch spinach
1 litre vegetable broth
2 cloves garlic
1 lb shrimp
10 grams curry paste (about 1 tablespoon)

Recipe Directions for Shrimp & potato soup

  1. Sautee onion in oil until it is just starting to brown.

  2. Add potatoes and garlic and stir.

  3. Pour broth over potatoes and onions and simmer until potatoes are cooked. (About ten minutes)

  4. Add spinach. Cool three minutes more.

  5. Add shrimp and curry paste.

  6. Simmer over very low heat five minutes.

  7. Blend using a hand-blender.

  8. Simmer three more minutes.

  9. Serve.
