Recipe Ingredients for Shrimp Pesto Pasta

4 ounces uncooked angel hair pasta
1/2 cup low sodium chicken broth
7 ounces can diced tomatoes
1 1/4 pounds shrimp
1/4 cup pesto, divided
4 plum tomatoes
1/4 cup (1 ounce) shaved Parmesan cheese

Recipe Directions for Shrimp Pesto Pasta

  1. Cook pasta according to package directions, omitting salt and fat; drain.

  2. 2. While pasta cooks, bring 6 cups water to a boil in a large saucepan. Add shrimp; cook 2 to 3 minutes or until done. Drain shrimp; toss with 2 tablespoons pesto and tomatoes. Stir in pasta and 2 tablespoons pesto. Top with cheese. Garnish with basil, if desired.
