Quick and easy meal that can be modified to incorporate whatever vegetables you choose.

Recipe Ingredients for Shrimp Pesto Pasta

1 lb shrimp (shelled, including tail, and deveined)
16 ounce penne pasta
1/4 cup basil pesto
1/2 cup black olives, sliced
1/8 tsp. salt and pepper
1 small onion, minced
3 cloves garlic, minced
8 medium button mushrooms
2 tablespoons extra virgin olive oil

Recipe Directions for Shrimp Pesto Pasta

  1. Boil noodles according to package.

  2. Drain and set aside noodles.

  3. In a skillet heat up oil with garlic and onion

  4. Add raw shrimp and olives, cook until shrimp is done.

  5. Combine shrimp mixture and noodles

  6. Add pesto and feta.

  7. Mix well, adding salt and pepper to taste.
